Breaking Bread: Turkey & Zucchinni Burgers

INGREDIENTS
1 pound ground turkey
2 scallions (green onions), sliced thinly
2 Tbsp. fresh basil, chopped
1 Tbsp. fresh oregano, chopped
1 clove garlic, minced
Salt and fresh ground pepper
2 Zucchini, grated (about 2 cups)
2 Tbsp. olive oil
DIRECTIONS:
In a large bowl, thoroughly mix the ground turkey, green onions, basil, oregano, garlic, black pepper and salt. Add the zucchini and gently form six patties. Heat the olive oil in a large skillet on medium heat. Working in batches (don’t overcrowd the pan), gently cook the patties for about 4 to 5 minutes on each side. Make certain to use medium heat to ensure the patties are cooked thoroughly. They’re delicious as is, or inside a toasted bun.
