3 Tasty Zucchini Recipes To Try

We all know the summertime veggies are some of the tastiest of the year. Zucchini is one of the most popular summer veggies, and by this time of year, people are typically overwhelmed with them and not sure what to do! 

We've put together a few tasty recipes that showcase how yummy zucchini can be, and in creative ways.

Zucchini Lasagna Roll-Ups


  • 2 (15-oz.) containers ricotta
  • 3/4 c. grated Parmesan
  • 2 large eggs
  • 1 tsp. garlic powder
  • kosher salt
  • Freshly ground black pepper
  • 1 c. marinara
  • 5 large zucchini, sliced 1/8" thick
  • 1 c. grated mozzarella


  1. Preheat oven to 400 degrees F. Make ricotta mixture: In a small bowl, combine ricotta, 1/2 cup Parmesan, egg, and garlic powder and season with salt and pepper.
  2. Spread a thin layer of marinara into the bottom of a 9"-x-13” baking dish.
  3. On each slice of zucchini, spoon a thin layer of sauce, then top with a thicker layer of ricotta mixture, and sprinkle with mozzarella.
  4. Roll up and place in baking dish.
  5. Sprinkle with remaining 1/4 cup Parmesan.
  6. Bake until zucchini is tender and cheese is melted, 30 minutes.

Curly Zucchini Fries


  • 2 large zucchini, spiralized
  • 1 1/2 c. flour
  • 1 tsp. Italian seasoning
  • kosher salt
  • Freshly ground black pepper
  • Vegetable oil, for frying
  • 1/3 c. parmesan, grated
  • 1/2 c. marinara, warmed


  1. Heat about 1 in of oil in a large heavy-bottomed pot over medium heat.
  2. Meanwhile, whisk together flour, Italian seasoning, 2 tsp. salt and 1/2 tsp pepper. Dredge the zucchini spirals in the flour mixture. Toss until evenly coated.
  3. Work in batches to fry the zucchini. When the oil is hot, pick up a small mound of spirals with tongs, shake off excess flour and carefully drop in the oil. Use the tongs to separate clumping so that the spirals fry evenly. Fry until golden brown and crispy, about 2-3 minutes. Drain on paper towels. Season with more salt and pepper, to taste.
  4. Sprinkle with Parmesan and serve with warm marinara sauce.

Zucchini Fries


  • 5 large zucchini, ends trimmed and cut into thick matchsticks
  • 1 c. flour
  • kosher salt
  • 2 large eggs, beaten
  • 1/4 c. whole milk
  • 2 c. panko breadcrumbs
  • 1/2 c. grated Parmesan, plus more for sprinkling
  • Freshly ground black pepper
  • Warm marinara, for dipping


  1. Preheat oven to 425 degrees F. Season zucchini with salt and toss in flour in a shallow bowl or plate. Whisk beaten eggs with milk in a small bowl. In another bowl, add panko and Parmesan. Working in batches, dredge each piece into flour, egg (letting excess drip off), then panko, and transfer to a baking sheet. Drizzle with olive oil, season with pepper, and garnish with Parm.
  2. Bake until tender golden, 18 to 20 minutes. Serve with marinara.
